Every year, I make cheesecakes for Christmas gifts. My sister’s father-in-law couldn’t wait for Christmas every year for my cheesecakes, so I started making them for him for his birthday also. I fixed the recipe so that I could use it in the ready-made crusts to make it easier to transport.
Combine cream cheese and sugar, mixing at medium speed with an electric mixer until well blended. Add eggs one at a time, mixing well after each addition. Blend in vanilla.
Pour the mixture over the crust. Bake in a 450-degree oven for 10 minutes, then reduce heat to 250 degrees for 20- 30 minutes, until set. Chill.
Top with pie filling of choice and whipped cream.
