An easy sweet quick bread that makes a perfect breakfast or afternoon snack.
Preheat oven to 350ºF and butter and flour a loaf pan. (I also placed a sheet of parchment paper in there for easy removal.)
Add eggs and sugar to a large mixing bowl and beat together using a stand or hand mixer. Beat in butter, yogurt and lemon zest until everything is well mixed.
In a separate bowl, sift together flour, cornmeal, baking soda, baking powder, salt, and thyme. Slowly mix dry ingredients into wet and pour batter into prepared pan.
Bake for 45–50 minutes or until a cake tester comes out clean.
