Plump, juicy strawberries stuffed with a creamy cheesecake filling, sprinkled with crushed Nilla wafers and drizzled with chocolate! Everywhere I bring these, I always get “oohs” and “aahs” and they always disappear quickly! Extremely easy to make, and you can customize them to your taste. They are wonderful topped with crushed graham crackers, pecans, white chocolate, or eat them plain with just the cheesecake filling.
1. Cut a straight line across the top of each strawberry (removing stem), so berries stand upright. Place strawberries cut side down and make a criss cross cut on the bottom of each strawberry. Cut no more than 3/4 of the way down, making sure you do not cut all the way through. Gently fan out wedges.
2. In a medium-sized bowl, mix together cream cheese, powdered sugar and vanilla extract, until creamy and smooth. Fill mixture into a pastry bag or Ziploc bag. Cut a small slit on one end of the bag.
3. Gently fill each strawberry with the cream cheese mixture. Sprinkle crushed Nilla wafer cookies on top.
4. Microwave chocolate chips in a small bowl for about 1 minute, or until melted. Stir melted chocolate with a fork and drizzle over the top of the strawberries. You can drizzle as much or as little of the chocolate as you’d like.
5. Refrigerate until ready to serve, and enjoy!
Note: these are best if served the same day.

They were really good! I doubled the recipe for a party, and they were a huge hit. My filling wasn’t quite as lovely, but I blame the user on that. I sprinkled graham cracker crumbs on top instead because I had some left over and used a ganache, which was delicious. Excellent recipe and super easy!

aaaahhhh-mazing. my hubby actually made them, i found the recipe. we made a few small changes though, instead of the vanilla wafers he crushed up a graham cracker crust, stuffed that down inside the strawberries and then filled them with the cheesecake stuff. then sprinkled the graham cracker on top of the berries and then drizzled chocolate. we used milk chocolate (personal preference) but these were a HUGE hit!! thanks!!

These are fun to make, delicious and make a stunning presentation. I will be making these again … over and over again!
