There are so many uses for this great salsa. It’s easy to prepare and great on chicken, pork or fish.
On a greased grill or griddle pan over medium-high heat, place pineapple rings in a single layer. Grill for 2-3 minutes on each side. Remove pineapple to a clean work surface to cool.
In a mixing bowl add finely diced red onion, lime zest and juice, salt and reserved pineapple juice. Stir to combine. Cut grilled pineapple rings in small pieces and add it into the mixing bowl. Add balsamic vinegar. Stir with a spatula to incorporate ingredients.
Cover bowl with plastic wrap and refrigerate several hours before serving. Enjoy!
