Low-fat and very moist. It’s our favorite for fall.
This is the easiest cake I’ve ever made. You simply put the box of cake in a bowl and mix it with the pumpkin. Then you bake in a bundt pan according to the directions on the box. That’s it. Nothing else needed!
I do like to top it with a powdered sugar frosting (2 cups sugar to 1/2 tsp vanilla) but it doesn’t need it.

After a 13 hour work day I was loving this recipe as I wanted to have a few beers and bake! I added everything in that the cake box told me to plus the pumpkin, some dried cranberries, some extra ground mace, cloves and Cinnamon, but I forgot to add any oil. Wow, the outcome was so good! What a lovely and quick box recipe! It was really perfect to have this come about on such a busy night.

I’ve made this cake for years as a brunch favorite. I have found that adding two eggs and about 1/4 of oil makes the cake much less crumbly making it easier to slice.
