Chili Non Carne, a vegan twist on a popular dish. Perfect for chilly spring evenings.
Heat the olive oil in a large pot over medium heat then add the onion and cook until softened. Add the garlic, carrots and peppers, and sauté until soft, about 5 minutes. Add the rest of the ingredients, cover and cook for 40 minutes or more. I think that slow cooking will make it even better.
