All the flavor of a chocolate chip cookie packed in a sweet quick bread! So good you’d never know it is gluten-free!
Preheat oven to 350ºF.
Mix flour, oats, baking powder, salt, vanilla pudding mix, and sugar, combine well.
Mix wet ingredients in a bow. Add wet ingredients and half of the chocolate chips to dry ingredients, mix well.
Pour into greased 9-inch loaf pan, top with remaining chocolate chips. Bake for 1 hour.
