The perfect addition to your breakfast menu! Salty country ham and sharp cheddar cheese, combined with the crunch of fresh jalapeno will have your guests begging for more!
1. Preheat oven to 350 F.
2. Put the diced ham in a small baking pan, such as a pie plate and put it in your oven while it is preheating.
3. In a mixing bowl combine flour, cornmeal, baking powder and pepper. Give it a good stir until everything seems mixed well.
4. Add cheddar, eggs, buttermilk and the diced jalapeños and mix to combine.
5. Now, take the country ham out of your oven. Drain off any liquid, and add the ham into your batter. Mix well.
6. Grab two 12-count standard size muffin tins, spray with cooking spray and put a heaping spoonful of the batter in each cup.
7. Bake for 20 minutes until golden brown.
