Description

Easy banana muffins with chocolate chips that are ready in 2 minutes!

Ingredients

  • ⅓ cups Vegetable Oil
  • ½ cups Brown Sugar
  • ½ cups Water
  • ¼ cups Plain Yogurt
  • ¾ cups Mashed Bananas
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • 1 whole Egg
  • ½ cups Chocolate Chips

Preparation

In a large bowl, whisk the oil and brown sugar until mixed well. Into this add the water, yogurt and mashed bananas and whisk well until everything is combined well. Add all the dry ingredients (flour through baking soda) along with the egg and whisk again until the mixture is smooth and blended. Then stir in the chocolate chips (optional). Do not over whisk it, as it may not yield soft muffins.

Grease standard size silicon or paper muffin cups (make sure they are microwaveable) and fill each about halfway full with the batter. Top with a few more chocolate chips, if desired.

Microwave for about 2-3 minutes, or until the muffins are done. Keep an eye towards the end of the cook time, as you don`t want hard muffins. You should not over cook them.

Enjoy a very sweet, soft and yummy muffin, just in minutes.

Note: There are paper liners that could be microwaved that are available in stores and those liners are being used here and you could use which ever size is suitable for you. Just make sure you fill the batter only half as it rises up.
