Description

This Chocolate Crazy Cake is the best, easiest, fluffiest chocolate cake you’ll ever make. It also just happens to be a one bowl recipe that’s completely dairy and egg free. Crazy cake for the win!

Ingredients

  • FOR THE CAKE:
  • 6 Tablespoons Cocoa Powder
  • 2 cups Sugar
  • 3 cups All-purpose Flour
  • 1 teaspoon Salt
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 2 cups Water
  • 1 cup Vegetable Or Canola Oil
  • 2 Tablespoons Vinegar
  • 1 teaspoon Vanilla Extract
  • FOR THE CARAMEL FROSTING:
  • 4 Tablespoons Butter
  • 5 Tablespoons Brown Sugar
  • 4 Tablespoons Heavy Cream
  • 1-½ cup Powdered Sugar

Preparation

Preheat oven to 350ºF. Grease and flour a 9 x 13 inch baking pan.

For the cake:
In a large bowl, whisk together the cocoa powder, sugar, flour, salt, soda, and baking powder. (Note: If your cocoa powder is clumpy, you may need to sift the mixture together to get it smooth.)

Make a hole in the center of the dry ingredients then pour in the water, oil, vinegar, and vanilla. Mix all the ingredients together until smooth. Pour in the prepared baking pan and bake for 30 minutes, or until toothpick inserted in the center comes out clean.

For the frosting:
In a small sauce pan, melt the butter. Add the brown sugar and bring to a boil, whisking constantly, until sugar is dissolved. Add the cream and bring back to a boil. Remove from heat and sift 1 cup powdered sugar into the pot. Whisk until smooth. Continue to add powdered sugar until desired consistency is reached. (It should be thick but pourable, like the consistency of maple syrup). Pour the glaze over the cake while it’s still hot, then allow to cool on the cake.

Serve the cake slightly warm with milk, if desired.

This cake is really fantastic! Super easy one bowl recipe with great texture and taste. I used dark chocolate cocoa in the batter and a pinch of salt and some vanilla for the glaze. I will definitely make this again. Thanks for sharing, Courtney!
