Nice alternative to heavy tomato chili! I almost always use less water than soup/stew/chili recipes call for. For this recipe, I’d go with just enough water to not quite cover the veggies/beans. I meant to blend it as suggested, but forgot. I think it would be tasty either way. Thanks for sharing!

Unblended, I would say this dish is not as thick as I generally expect from chili, more like a soup with beans and chili flavoring. I decided to blend much of the soup to get the dish as pictured and I do prefer this consistency. I would consider making this again but its not a must have.
