Fragrant orange almond cake with a dense, buttery texture. Perfect for tea time and lazy afternoons. Gluten-free, too.
1. Preheat oven to 355ºF and grease a 7″ tart pan with olive oil.
2. In a medium bowl, add almond flour, sea salt, and baking powder. Use a fork to mix.
3. Remove seeds from oranges (leave peel intact) and place in high speed blender on high for 20-30 seconds until pureed. Set aside.
4. Whisk eggs, coconut oil, and honey in another medium bowl.
5. Add wet mixture to the dry mixture and mix until smooth.
6. Stir in orange puree and vanilla.
7. Transfer batter into the tart pan. Bake for 25-30 minutes until golden.
8. Dust with powdered sugar. Enjoy!
