This dish is such a nice twist in any traditional rice pilaf recipe. Did I mention it’s baked?
Preheat oven to 350 F.
In a small skillet over medium heat, saute the onion, garlic and bell pepper in the butter until tender. Transfer to a large bowl. Stir in the remaining ingredients (except the cilantro garnish).
Pour mixture into an un-greased 13×9-inch baking pan. Cover and bake at 350 F for 1-1/2 hours.
Garnish with fresh chopped cilantro.
