Description

These waffles are so full of protein and fiber! They are a great way to start your day. You can use gluten free flour to make a no gluten version as well.

Ingredients

  • FOR THE WAFFLES:
  • 1 whole Baked Sweet Potato
  • 1  Egg
  • 1 Tablespoon Honey
  • 1 teaspoon Coconut Oil, Melted
  • 1 cup Buttermilk
  • ½ cups Whole Wheat Flour
  • ½ teaspoons Cinnamon
  • ½ teaspoons Grated Nutmeg
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • FOR THE FROSTING:
  • ¼ cups Butter, Melted
  • 1 Tablespoon Brown Sugar
  • ½ cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Milk, If Needed To Thin Out The Frosting
  • ¼ cups Candied Pecans

Preparation

Scoop the innards out of the sweet potato, put them into a bowl and mash them. Add the egg, honey, coconut oil and the buttermilk. Add the flour, spices, salt and baking soda and mix to combine.

Preheat your waffle iron according to manufacturer’s instructions. Grease the iron and cook the batter in multiple batches according to manufacturer’s instructions.

For the frosting: In a small bowl combine the melted butter, sugars and vanilla. Add a little milk if it is too thick. Frost the waffles with the frosting and top with the pecans.

I really dislike leaving a bad review but these waffles were a big fail. I followed the recipe exactly but the waffles never came together. Even after extending the cooking time the waffles never fluffed up but remained a partial liquid mess. Maybe there is suppose to be more flour? Baking POWDER instead of baking SODA? Some measurement has to be off.

I do give this one mitten because the smell was amazing. I just wish I could have tasted them.
