Instantly satisfy an ice cream craving with this fast recipe for a delicious Lemon Blueberry Ice Cream. Machine not required.
If you have a high-powered blender, combine all ingredients at once and give it a whirl until all is thoroughly mixed and smooth.
If you are working with a standard blender, combine frozen blueberries, lemon juice, and sugar; blend on highest level for a minute. Remove top and see if you might need to break up the ice a bit. I do this with a fork. Pour in the milk and continue to blend on high until mixture is completely blended, thick and smooth.
Serve right away as soft-serve ice cream, or pour it into a container with a lid and freeze it for 2 hours or up to a week.
