Delicious Granny Smith apple cake. You can substitute with any fruit you like!
In a saucepan over medium heat, simmer apple slices, cinnamon, light brown sugar and 1/2 cup of water until apples are soft. This will take about 20 minutes to cook. When done remove pan from the heat. Mash cooked apples into a thin pulp mixture. This will be used in place of the water for the cake mix, and it will also be used in the icing mixture as well.
Combine the boxed cake mix, eggs and oil in a large bowl. Do not add the water (that’s mentioned on the cake mix box) into this cake mixture! When the apple mixture is ready, add 1 1/3 cups of the mixture to the cake mix in place of the water. Mix well, pour batter into your preferred cake pan as directed on the cake box and bake per the directions on the cake box.
Combine the rest of the apple mixture with the chopped pecans, graham cracker crumbs, melted butter, melted vanilla icing and water. Mix really well.
When it’s done remove the cake from the oven. The cake may be iced while it is still warm or after it has cooled down. That is your preference!
Any fruit may be used in place of the apples; just take out the cinnamon and replace the light brown sugar with regular white sugar.
Actually, any of the ingredients may be changed to suit your tastes, but then it will be your creation, not mine. That’s what it’s all about! Be creative and enjoy!
