Description

Granola is a much loved snack among many! Take it on the run, enjoy it over yogurt, eat with milk like cereal or pack it for a snack on a long trip. There are so many ways to enjoy it! Dried fruit substitutions are endless! Can be made with nuts or without!

Ingredients

  • 2 cups Rolled Oats
  • 1 cup Pumpkin Seeds
  • ½ cups Ground Flaxseed
  • ½ cups Honey
  • 1  Egg White
  • 1 whole Egg
  • ¼ cups Extra Virgin Olive Oil
  • 2 teaspoons Vanilla Extract
  • ½ teaspoons Vanilla Liquid Stevia
  • ½ teaspoons Salt
  • ½ cups Dried Apricots, Chopped
  • ½ cups Dried Cherries
  • ½ cups Raisins
  • ½ cups Tahini (sesame Seed Spread)

Preparation

Preheat oven to 350 F. Line a large rimmed baking sheet with parchment paper.

In a large bowl combine the first 10 ingredients (oats through salt) mix well then spread it on the baking sheet. Bake 15 minutes.

In another large bowl mix the dried fruits with the tahini. Add the toasted mixture into the bowl and mix it with the dried fruit. Mix well. Spread onto the lined baking sheet. Bake 20 minutes, stir mixture and continue to bake another 10 minutes or until toasted and browned.

This recipe is adapted from my original review of a clean eating Oat & Granola I found in Tosca Reno’s book, “Your Best Body Now”.
