Description

Coffee cake is great for breakfast, dessert, or a special occasion! This one has a layer of apples coated in cinnamon sugar in the middle, and a sweet crunchy topping.

Ingredients

  • FOR THE CAKE:
  • 2 cups Flour
  • 1 cup Sugar Plus 2 Tablespoons, Divided
  • 3 teaspoons Baking Powder
  • 1 teaspoon Salt
  • ⅓ cups Soft Unsalted Butter
  • 1 whole Large Egg
  • 1 cup Whole Milk
  • 1 teaspoon Cinnamon
  • 1 whole Medium Apple (Or 2 Small), Sliced Into Thin Pieces
  • FOR THE TOPPING:
  • ⅔ cups Dark Brown Sugar (packed)
  • ¼ cups Flour
  • 2 teaspoons Cinnamon
  • 3 Tablespoons Melted Butter

Preparation

Preheat the oven to 350ºF. Butter a 9″ x 2″ cake pan and dust with flour.

In a large bowl, sift together the flour, 1 cup of sugar, baking powder, and salt. Add the butter, egg, and milk and beat for 2 minutes. Spread half the cake batter into the prepared cake pan, using a spatula to push it to the edges.

Mix the remaining 2 tablespoons of sugar and cinnamon in a medium bowl. Add apples and toss to coat. Lay apple slices on top of cake batter, covering entire layer. Pour remaining cake batter on top the apples, gently pushing the batter to the edges with a spatula. Be careful not to disturb the apple layer underneath.

Make topping by combining brown sugar, flour, cinnamon, and melted butter with a fork until crumbly but not overly wet. Sprinkle on top of cake.

Bake at 350ºF for 35-40 minutes. Let cool completely before serving.
