Description

Festive mini cupcakes for football season!

Ingredients

  • 1 package Chocolate Cake Mix, 15-18 Ounce Size Box
  • Additional Required Ingredients Specified For The Cake Mix (typically Water, Eggs And Oil)
  • 2 cups Sweetened Coconut Flakes
  • 20 drops Green Food Coloring
  • 1 can Vanilla Frosting, 16 Ounce Size
  • 3 ounces, weight Whole Plain Almonds

Preparation

1. Prepare cake mix according to package instructions and bake in mini cupcake portions. When done remove them from the oven and allow the cupcakes to cool.
2. While the cupcakes are cooling, put coconut flakes into a small bowl and mix in green food coloring 3 or 4 drops at a time until a medium green shade is achieved.
3. Mix half of the vanilla frosting with green food coloring, adding it 3 or 4 drops at a time until a medium green shade is achieved. Fill a pastry bag or a zip top bag with one small corner cut off with the remaining white frosting.
4. Frost the cupcakes with green frosting, spreading it on with an offset spatula or knife. Sprinkle coconut on top until covered then pat it down. Use the extra green frosting as glue by placing a dot on top of the coconut and place the almond on top of the coconut. Pipe small lines of white frosting on top of the almond like the laces on a football.
