A classic banana bread with a very yummy and slightly tropical twist.
1. Preheat oven to 350 F. Spray a 9 x 5 x 3 inch loaf pan with cooking spray; set aside.
2. In a large bowl, mix together flour, coconut, baking powder, baking soda, salt and chopped pecans.
3. In a medium sized bowl, beat the eggs until light and frothy. Add sugar and melted butter, beat well. Stir in mashed bananas and almond extract.
4. Add the egg mixture into the flour mixture and stir until just combined. Spoon into the greased loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Then remove it from the oven, let it stand for 10 minutes in the pan, then remove bread from the pan onto a wire rack to cool completely.
