A healthier gluten- and refined sugar-free, low carb chocolate macaroon.
Preheat oven to 200 F.
Combine all ingredients in a medium-sized bowl and mix until just combined.
Using a tablespoon-sized scoop, drop mixture onto a parchment paper-lined cookie sheet.
Bake at 200 F with oven door slightly ajar for 3 hours. Yields roughly 16 macaroons.
