Description

Food Processor Cake for those lazy days … Yummy ‘n quick.

Ingredients

  • 1 cup Self-Rising Flour
  • ½ cups Chocolate Chips Plus Extra For Sprinkling On The Top
  • 1 pinch Salt
  • 1 teaspoon Baking Powder
  • 2 whole Large Limes
  • ¼ cups Brown Sugar
  • ½ cups Olive Oil
  • 1 teaspoon Vanilla Essence
  • 2 whole Large Eggs
  • 2 drops Yellow Food Color

Preparation

Preheat oven at 180 C. Grease a 13×9 loaf pan and set it aside.

In a medium bowl, mix flour, chocolate chips, salt and baking powder using a fork. Set aside.

Using a zester, zest the limes. Set zest aside. Then juice the limes into a bowl. (If you don’t have a zester, you may use vegetable peeler or completely omit this step).

In a food processor, add sugar, oil and vanilla essence and pulse for 30 seconds. Add eggs and pulse for a minute (making sure the eggs are nicely mixed). Add lime zest, juice and yellow food color and pulse for 30 seconds. Now add “dry ingredients” to this and give it a quick pulse (2-3 pulses) making sure not to chop the chocolate chips too much.

Pour the mixture into the prepared loaf pan, sprinkle some chocolate chips on top and bake for 30 minutes at 180 C. After 30 minutes, insert a toothpick/thin knife into the loaf and if it comes clean, plan the loaf pan on a cooling rack. If it doesn’t come out clean, bake the loaf for another minute or two and test again.

Serve with tea/coffee or eat it as is.
