Description

This cake is a comforting favorite in my household, with the perfect balance of spice and tang.

Ingredients

  • ½ cups Yogurt
  • ½ cups Canola Oil
  • ½ cups Milk
  • 1 whole Egg
  • ½ teaspoons Vanilla Extract
  • 1 Tablespoon Molasses
  • 1 cup Brown Sugar, Plus Two Tablespoons, Divided Use
  • 1-½ cup All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 Tablespoon Cocoa Powder
  • ½ teaspoons Instant Coffee Powder
  • 2 teaspoons Ground Cinnamon, Divided Use
  • ⅛ teaspoons Ground Allspice
  • ⅛ teaspoons Ground Nutmeg
  • ⅛ teaspoons Ground Cardamom
  • ⅛ teaspoons Ground Ginger
  • ⅛ teaspoons Ground Cloves

Preparation

Preheat the oven to 400 F.

Whisk together the yogurt, oil, milk, egg, vanilla and the molasses in a large bowl. Set aside.

In a medium bowl combine 1 cup of the brown sugar, the flour, baking powder, salt, cocoa powder, coffee powder, one teaspoon of cinnamon, and the other spices.

Pour the dry ingredients into the wet and stir to combine. Pour the batter into an 8 1/2-inch square baking dish.

In a small bowl, combine the remaining two tablespoons of brown sugar and the remaining one teaspoon of cinnamon. Sprinkle evenly over the top of the batter.

Bake for 25 minutes at 400 F, or until the top has browned, then reduce the heat to 350 F and bake for about 10 minutes to finish baking. The cake is done when a cake tester comes out cleanly. Let cool in the pan. Enjoy!
