Vanilla cupcakes jazzed up with a golden Oreo cookie in the bottom and topped with vanilla cookies and cream buttercream.
For the cake:
In a mixing bowl, make up the boxed cake mix using the directions on the back (you’ll typically need water, eggs, and oil, as directed in mix package). Place vanilla cookies into the bottom of cupcake liners. Fill liners 3/4 full and bake at 350ºF for 18 minutes. Let cool completely. Frost with vanilla cookies and cream frosting.
For garnish, take the extra 8 cookies and break into quarters. Top each cupcake with 1 piece of cookie.
For the frosting:
Finely crush enough vanilla cookies to make 1 cup. Set aside. In a mixing bowl cream the butter and shortening. Add the cream, vanilla, and salt and cream again. Slowly add the powdered sugar until all incorporated. Add the finely chopped cookie crumbs and mix again.

What a grand idea!! You could do the same thing using chocolate oreos and chocolate cake mix. My mind is running up and down the cookie isle looking for cookies that will fit in the bottom of the cupcake liners…wondering if there is lemon cookie…thanks so much for the inspiration!!!
