Description

I love baking with alcohol because alcohol makes life fun, and being the only woman who works with a bunch of guys, you need some stress relief. These yummy cocktail cupcakes do just that. Enjoy!

Ingredients

  • FOR THE CUPCAKES:
  • 1-⅓ cup All-purpose Flour
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ¼ cups Orange Juice
  • 2 teaspoons Finely Grated Orange Zest
  • 1 cup Milk
  • ¼ cups Vegetable Oil
  • 3 Tablespoons Tequila
  • 1 teaspoon Vanilla Extract
  • 2  Eggs
  • 1 cup Sugar
  • 1 cup White Chocolate Chips
  • FOR THE FROSTING:
  • ½ cups Butter Or Margarine, Room Temperature
  • 3-½ cups Confectioners Sugar
  • 2 Tablespoons Milk
  • 3 teaspoons Tequila
  • 2 teaspoons Finely Grated Orange Zest
  • White Chocolate Discs, For Garnish

Preparation

Preheat oven to 350°F. Prepare muffin tin with paper liners.

In a large bowl combine flour, baking soda, baking powder and salt. In a separate bowl, whisk together orange juice, orange zest, milk, oil, tequila, vanilla extract, eggs and sugar. Stir in dry ingredients and mix until combined. Stir in white chocolate chips.

Fill cupcake liners about 2/3 full and bake for 20-25 minutes. Poke it with a toothpick to see if it comes out clean. Transfer to a cooling rack and allow to cool down before frosting.

For the frosting, cream butter and confectioners’ sugar until smooth and fluffy. Add milk, tequila and orange zest and mix until combined. Spread graciously onto cupcakes.

Decorate with white chocolate discs and bright orange cupcake liners. If you are feeling super creative, insert a cut straw into the cupcake or maybe even an umbrella.

If you are a bit more on the lazy side (we all have that side), then use a vanilla cake mix, add the ingredients required on the box and just toss in the tequila, orange juice, orange zest and white chocolate chips.

Shot of tequila is compulsory!
