Description

Don’t tell anyone, but this amazing rice dish is made in the same time it takes to boil plain old rice.

Ingredients

  • 1-½ cup Uncooked White Rice
  • 3 cups Water
  • 2 Tablespoons Olive Oil
  • 1-½ Tablespoon Lemon Juice
  • 1 clove Garlic, Minced
  • 1-¼ teaspoon Kosher Salt
  • ½ teaspoons Black Pepper
  • 3 Tablespoons Butter
  • ¾ cups Shredded Parmesan Cheese (no Cans, Please)
  • 1-½ Tablespoon Chopped Fresh Basil

Preparation

Bring water to boil in a medium saucepan with a lid. Stir in rice, oil, lemon juice, garlic, salt and pepper. Cover and simmer on low heat for 20 minutes. Stir in butter until it melts, then Parmesan and basil. Makes a nice accompaniment, but hearty enough to have alone, too.

This rice side is great! I made it for company to accompany the panko/parmesean/parsley pork chops also found in Tasty Kitchen and the pairing was a smashing success. EVERYBODY, even the 8 and 12 year old went back for seconds of the rice! Very tastey, thanks for this recipe!
