Windsor Park Apple Cake

Description
Every woman in my mom’s neighborhood credits another neighbor with this recipe, so I credit the all the women of Windsor Park. It’s easily my favorite cake!
Ingredients
- 4 cups Apples, Diced
- 2 cups Flour
- 2 cups Sugar
- ½ cups Vegetable Oil
- 2 whole Eggs, Plus 1 More Egg, If Needed
- 2 teaspoons Cinnamon
- 2 teaspoons Baking Soda
- 2 teaspoons Salt
- 2 teaspoons Vanilla
Preparation
Preheat oven to 350 degrees.
Dice apples (usually around 4 apples). You may or may not peel them, according to your preference.
Combine all ingredients, adding 3rd egg if necessary. Batter should be thick and chunky.
Spread into a 9×13 baking pan. Bake for 45 minutes at 350 degrees until a toothpick inserted comes out clean.
Cool and frost with cream cheese frosting. This is even better the next day.
