Red velvet cupcakes without the dye. The same great taste with a lovely natural ginger color.
Preheat oven to 350°F.
Sift together dry ingredients. Beat together wet ingredients until smooth. Mix wet and dry ingredients and beat until uniform, about 2 minutes. Pour into muffin tins lined with cupcake liners.
Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Makes 12 jumbo cupcakes.

oh wow.. i’ll have to make these this weekend! i always felt a bit squeamish adding all that red coloring.. these sound great!! thanks for posting!
