Peanut butter chocolaty goodness!
Mix peanut butter, butter and vanilla together completely. Using dough hook attachment (or spoon if mixing by hand), add powdered sugar one cup at a time. Mix together until completely combined. Dough will look crumbly and dry.
Roll dough into 1-inch balls and place on cookie sheet lined with parchment or waxed paper. Once all the dough is gone, place a toothpick in the center of each one of the balls. (This will help you dip them into the chocolate later.) Place cookie sheets in freezer until the balls are frozen.
Melt chocolate in the microwave or double boiler (I make my own with a small sauce pan and glass bowl). Dip balls 3/4 of the way in the chocolate, holding them by the toothpick. Return dipped balls to the cookie sheet. Let cool and enjoy!
This makes about 85 buckeyes.

This recipe is pretty much the same as mine, but mine uses semi sweet chocolate chips and you add a little paraffin to the chocolate. This makes them really shiny like real buckeyes, and keeps the chocolate from melting in your hand.

These are delicious! I love buckeyes! When I made these, the chocolate melted in your hand before you could finish it though.

Thanks for the recipe, we made these earlier toady. A bit sweet, acutally a lot sweet, but my mother makes these each Christmas and brings a special sweet memory!

I am from Ohio so I am a HUGE Ohio State Buckeye fan. I make these at least once every football season. They freeze really well, too!
