What better way to celebrate fall than with a moist and comforting apple-filled cake? This recipe is also great to make ahead, as the brown sugar yields a cake that remains moist and tender. Serve for breakfast or as a lovely midday snack. Makes one 9″ cake.
Preheat oven to 350 degrees.
Liberally butter a 9″ x 2″ cake pan (for added nonstick insurance, you can also line the pan with parchment paper). Set aside.
Sift together flour, baking soda, cinnamon, cloves, nutmeg, and salt.
In a stand mixer or large bowl, beat butter until light in color. Add brown sugar gradually until well incorporated and light in color and texture. Beat in egg.
Add sifted dry ingredients to the butter mixture in 3 parts, alternating with applesauce in 2 parts. Stir in nuts and apple slices.
Pour batter into prepared 9″ x 2″ cake pan and bake for 20 to 25 minutes or until a wooden skewer comes away clean. Cool cake in pan on a rack for 5 to 10 minutes before removing from pan.
