You can even use this recipe for a plain pound cake by excluding the coconut and adding a teaspoon of vanilla.
Cream together oil and sugar for 10 minutes. Add eggs one at a time, beating after each addition. Sift flour, baking powder, and salt twice. Beat in alternately with milk. Stir in coconut and flavoring. Pour batter into a fluted tube pan. Place in a cold oven. Set temperature at 325 degrees F and bake for 1 hour 25 minutes.
