Description

Chocolate chip waffles made partly with applesauce and whole wheat flour, topped with a homemade raspberry sauce. Great for Valentine’s Day breakfast!

Ingredients

  • FOR THE WAFFLES:
  • 1-¾ cup Milk
  • 2 whole Eggs
  • 1 Tablespoon Granulated Sugar
  • ¼ cups Applesauce
  • ¼ cups Vegetable Oil
  • 4 teaspoons Baking Powder
  • 1 pinch Salt
  • 1 teaspoon Vanilla Extract
  • 1-¼ cup All-purpose Flour
  • ¾ cups Whole Wheat Flour
  • ¼ cups Semisweet Chocolate Chips
  • FOR THE TOPPING:
  • ¾ cups Water
  • ¼ cups Granulated Sugar
  • 1 cup Organic Frozen Raspberries
  • ¼ cups Cold Water
  • 1 Tablespoon Cornstarch

Preparation

For the waffles:
1. Preheat waffle maker according to manufacturer’s instructions.
2. Add milk and eggs into a large bowl or measuring cup and mix with a whisk until blended well.
3. Add sugar, applesauce, oil, baking powder, salt and vanilla into the bowl and whisk together.
4. Add flour last and mix with whisk until batter is well blended.
5. Spray waffle maker with cooking spray before each time you pour in the batter.
6. Pour batter into the waffle maker up to the fill lines and then add a few chocolate chips quickly. Close the waffle maker.
7. The cooking time depends on the waffle maker, but usually about 1 minute is enough, or cook until golden brown. When done, remove the finished waffle to a plate and repeat with the remaining batter.

Raspberry topping:
1. Add 3/4 cup of water, sugar and frozen raspberries into a small saucepan over medium-high heat. Bring to a boil.
2. Mix cornstarch into 1/4 cup of cold water until fully dissolved, then add it to the raspberry mixture. Stir.
3. Bring to a boil again and then simmer for 5 minutes, stirring occasionally. Serve on top of the waffles.
