I love to have a quick healthy homemade jam in the house. You can make this with fresh or frozen fruit. You can add as much sugar or no sugar at all. This is perfect for making little desserts or as a topping on oatmeal and yogurt. My favorite is as a topping on peanut butter and jelly sandwiches!
Place fruit in a pan. Add lemon juice and sugar (optional) and turn heat up to medium. Stir constantly until thick and bubbly. This will take about 7 minutes for fresh fruit and 10 minutes for frozen fruit.
Once cool, add it into a jar or bowl and refrigerate!
Makes 2 Cups.
