Try something new this holiday.
Preheat oven to 350 degrees F. Cube the squash and add it to a pot, covered with water. Boil until tender, about 15 minutes, then drain off the water and mash the squash with a potato masher.
Chop the celery and onion and saute in butter and olive oil until translucent. Add flour and seasonings and continue to cook for a minute. Slowly stir in broth, letting it become thick. Then add the squash. Remove from the heat and stir in the bread. Place in a 9×9 baking dish and bake for 40 minutes.
