Description

Healthy and super cute Pinkalicious Beet Pancakes!

Ingredients

  • 1-¾ cup White Whole Wheat Flour
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Baking Powder
  • 1 dash Salt
  • ½ cups Beet Puree
  • 1-½ cup Whole Milk
  • ⅓ cups Plain Yogurt
  • 3 Tablespoons Butter, Melted
  • 1 whole Egg

Preparation

Combine the dry ingredients (flour through salt on the above list) in a small bowl and set aside.

Combine the beet puree with the other wet ingredients in a larger bowl. Once the wet ingredients are thoroughly combined, stir in the dry ingredients just until combined. Do not over mix.

The rest of the steps here are pretty basic….. heat the griddle, pour pancake sized scoops of the batter on the griddle, wait for the bubbles to appear on the top then flip over and cook until the bottom is done to your liking.

These pancakes are super tasty just as they are or add on a tiny bit of pure maple syrup, chopped walnuts, sliced banana and strawberries to make a complete breakfast!

These are fantastic pancakes. I went a little crazy when it was beet season here in Nepal and then was looking for more ways to use them up, and came across this recipe. My kids gobbled them up! My son promptly requested “pink pancakes” for his birthday dinner. They have become a regular on our dinner rotation now. Just for curiosity, I tried them with carrot puree tonight, as beets are harder to find right now and they are really tasty too!
