The perfect fall cupcake made with fresh apples and topped with cream cheese icing. When the baby makes a request, you must provide the goods!
1. Preheat oven to 350ºF.
2. For the apple mixture, place the apples in a pot and just cover with water. Cook on the stove until soft.
3. Drain the apples and let cool. Mash them with a potato masher, add in maple syrup and cinnamon, stir well.
4. In your mixing bowl, combine the apple mixture, butter, applesauce, milk, brown sugar, organic sugar, vanilla extract, and mix until creamy.
5. In a separate bowl, combine the flour, baking powder, soda, salt, cinnamon, ginger, and nutmeg. Whisk to combine.
6. Slowly add the dry ingredients to the wet ingredients.
7. Place the batter into a cupcake pan lined with paper linings and fill 2/3 full.
8. Bake in the oven for approximately 40 minutes. It takes longer to bake these cupcakes but it is so worth it. Bake until the center is done when a toothpick is inserted.
9. Combine frosting ingredients in a bowl and mix until smooth and creamy.
10. Top cupcakes with frosting. Add decorations if you desire. Eat with a smile.
