Recipe for a healthy and easy Greek yogurt fruit cup dessert that is light and refreshing. Fresh seasonal fruit is perfect served in the crisp wonton shells with tangy Greek yogurt and a drizzle of honey. Great for casual summer gatherings and parties.
Preheat oven to 350ºF.
Pour a small amount of oil into a small dish. Using a pasty brush, lightly brush the front and back of the wonton skin. Place the wonton skin into a mini cupcake/muffin tin.
Bake for 5 to 7 minutes or until golden brown. If the wontons are browning too fast, you can place a piece of foil over the the top to prevent them from burning.
Remove the wontons from the oven and allow to cool in the pan.
When ready to serve, fill each wonton with Greek yogurt. Top with two apricot slices and a quartered strawberry. Drizzle with honey and serve immediately.
Note: apricot can be substituted with other fresh fruit.
