Description

Moist and delicious. Great with a hot cup of coffee and a side of fresh fruit.

Ingredients

  • 1-¾ cup All-purpose Flour
  • 1 cup Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Ground Cinnamon
  • 3  Large Eggs
  • ½ cups Vegetable Oil
  • 1 teaspoon Vanilla
  • 1 cup Peaches, Chopped
  • ½ cups White Chocolate Chips
  • ½ cups Confectioners Sugar
  • 1 Tablespoon Water

Preparation

Preheat oven to 350ºF. Line muffin tins with paper cups.

In a large mixing bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon. Make a well in the flour mixture and add eggs, vegetable oil and vanilla and mix well. Fold in peaches and white chocolate chips.

Pour into muffin tins, ⅔ full.

Bake for 23-27 minutes until tops are golden brown and a tester inserted into center comes out clean. Let muffins slightly cool in the pan and remove to a wire rack.

While muffins are still warm, mix together confectioner’s sugar and water. Dip the tops of the muffins into the glaze and set on a wire rack to cool completely.

These were wonderful! I’ve made them a few times already. I’ve cut the amount of sugar and skipped the frosting. Family, co-workers love these. I also have frozen 3 peach half’s, which tasted as if the peaches were fresh! Awesome

Super easy to make and delicious. This recipe is atypical(meaning I usually make cupcakes from the box) and a great way to use those “extra peaches”, that is if you have any left. Followed the recipe just so and it made exactly 16 muffins. I highly recommend.

These muffins were quite good – I didn’t have white chocolate chips so I used semi-sweet, and I also didn’t have icing sugar for the glaze, so I skipped that (I think there’s a lesson to be learned here somewhere….). I thought they were great, but might have been too sweet for my tastes if I had actually followed the recipe. Also had issues with the 6 servings!

These were very yummy & easy to make. I didn’t finish them with the glazing – and my kids still loved them.

My only comment – when I saw that this served 6, I assumed that it was making 6 muffins. I doubled the recipe & got almost 36 muffins. I think they’ll freeze well.
