I used whole wheat sourdough baguette, soy milk, and organic evaporated cane juice to healthify this recipe … but do what you like!
1. Preheat oven to 350ºF.
2. Spray the inside of a 9″x5″ loaf pan (or casserole dish of similar size) with nonstick spray, or line it with oil or butter.
3. Take a damp cloth and line a roasting pan, then place your oiled loaf pan in. Fill up the roasting pan with water until half the depth of your loaf pan is submerged in the water.
4. Mix eggs, milk, sugar, vanilla, and salt in a mixing bowl.
5. Add the bread and banana, mix well, and let sit for 5 minutes.
6. Pour your soggy bread (delicious bread pudding) batter into your oiled loaf pan, and bake in the preheated oven for about 70 minutes, or until your creation looks like pudding.
7. Enjoy!
