This baked chocolate pudding is chewy on the outside and soft and velvery on the inside. It’s chocolate heaven. The best part? It’s easy peasy.
1. Preheat the oven to 400ºF. Place the chocolate in a mixing bowl over a pan of simmering water and add the butter. Do not let the bowl touch the water or the chocolate mixture will burn. Stir the chocolate and butter until just melted. Remove from heat.
2. In a mixing bowl, place the eggs, sugar, a tablespoon of water, flour and vanilla and mix until just combined. A bit at a time, add the chocolate mixture to the mixing bowl. Stir until fully combined.
3. Pour the mixture into 4 one-cup ramekins and put on a baking tray and on the middle rack of the oven.
4. Bake for 13–15 minutes, or until the edges are fully set. Remove from the oven straight away. Serve with cream or berries. Dust with icing sugar.

I finally got to make this last night! I really liked it, but have a question. Exactly what king of chocolate is ‘dark chocolate’? I used Ghirardelli’s 60% and 70% bittersweet chocolate bars and I weighed them. It is so DARK that it took lots and lots of powdered sugar on top to make it edible… then it was gooooood! Should I have used semisweet? or something else? I ate 2 last night and had one for breakfast this morning… I’m eyeing the one I promised my neighbor… Yummmmy!

Thanks girls. I have a different recipe on my blog that’s actually a molten lava chocolate but in cupcake form. Anyway, this is kind of like that but a bit chewier exterior.
