A quick, healthy, delicious dip that goes with everything! Try it on meat, veggies, pasta, or my personal favorite: straight out of the bowl.
Place cheese cloth in colander. If you do not have cheese cloth, do not worry. Finely grate all of cucumber into the colander.
If using cheese cloth, pull cheese cloth up into a bag with the cucumber inside. Squeeze firmly getting as much water out as possible. Let rest for a few minutes and combine other ingredients in a separate bowl. Squeeze a second time.
If not using cheese cloth, press cucumber into a thin layer so it can dry out more quickly. Set aside and combine other ingredients in a separate bowl. Using a few paper towels, press down on the grated cucumber in the colander to remove excess water.
Once cucumber is ready, add it into the yogurt mixture and stir well to combine.
This tastes best after it rests for a bit and all the flavors meld. Try making it the day before you want it. It should make enough for 6 servings, each about 1/4 to 1/2 cup.
