Description

A delicious dark chocolate cupcake stuffed with fizzy root beer frosting and topped with vanilla frosting that tastes like ice cream!

Ingredients

  • FOR THE CUPCAKES:
  • 1 whole Egg
  • ¾ cups Brown Sugar
  • ½ cups Plus 1 Tablespoon Heavy Cream
  • ½ cups Butter, Melted
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Sour Cream
  • 1-½ cup All-purpose Flour
  • ¼ cups Dark Cocoa Powder
  • 1-¼ teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2 teaspoons Root Beer Concentrate
  • ⅓ cups Root Beer
  • _____
  • FOR THE FROSTING:
  • 1-½ stick Butter, Softened
  • 4 cups Powdered Sugar
  • 2 Tablespoons Milk
  • 1 Tablespoon Vanilla Extract
  • ¼ teaspoons Root Beer Concentrate
  • Optional Topping: Hot Fudge Or Cocoa Syrup

Preparation

For Cupcakes:
Preheat oven to 350 degrees F.

In a bowl, whisk egg and sugar until smooth and no lumps remain. Add cream, butter and vanilla, and mix until combined. Stir in sour cream. Sift dry ingredients together and add to wet mixture. Add root beer concentrate and root beer. Mix until batter is smooth. Line a muffin tin with liners and using a heaping 1/4 cup measure, add batter to each cup. Bake for 15-18 minutes. Let cool before frosting.

For Frosting:
In the bowl of an electric mixer, cream butter until smooth. On low speed, add powdered sugar one cup at a time, increasing speed to bring the frosting together. Add milk and vanilla extract. Beat until smooth. Remove almost all of the vanilla frosting, leaving behind about 1/3-1/2 cup in the mixer. Set vanilla frosting aside. Add root beer extract to the remaining frosting in the mixer bowl and beat until it comes together.

Prep two pastry bags (or you can simply use spoons) and fill one with vanilla frosting and the other with root beer frosting. Once the cupcakes have completely cooled, fill each one with root beer frosting (I simply plunge the pastry tip into the middle of the cupcake and squeeze), then top with vanilla frosting. Top with hot fudge or cocoa syrup.

These were very good. I couldn’t find root beer concentrate so I used the extract. The root beer flavor was very subtle. The frosting was fizzy and to die for. I’ll definitely make these again after I hunt down some concentrate so I can see the difference.

I have been wanting to make these FOREVER. I finally did and they were great. I didn’t taste the Root Beer much in the cupcake, but the frosting made it better. Also it was a great change from the normal chocolate cupcake. The texture was a bit differnt, but the taste was great.

I normally don’t drink soda, but when I do, it’s root beer! I’ve been looking forward to baking these for a few weeks now…was just looking for the root beer concentrate and finally found it without having to purchase it online (shipping would have been almost twice as much as the actual product…yikes!).
These cupcakes fell a little flat for me. The frosting was good. The cake was a little heavy…didn’t seem to be the right texture. I’ll definately try them again and maybe add some chocolate chips like jenmomof3 mentioned…yum!!!

I made these for my husband’s birthday (he loves root beer:) and he thought they were fantastic. The frosting is amazing. The cake was not quite chocolate enough for my taste, but overall went well with the frosting. If I make them again I may try adding some chocolate chips to the batter, or even melting some with the butter.

I hate to give a poor review since I have fantasizes about these cupcakes for a week, and because I am too lazy to type in my own recipes for others to review. The frosting was delicious, however the cake was just not very good. There wasn’t much flavor in the cake. The texture wasn’t right either. I noticed there is quite a bit og baking soda and no baking powder? Maybe that is part of it? I also used regular cocoa powder as I was out of dark chocolate, that would have given more flavor. But there is no root beer taste in the cake even though there was in the batter, the batter was great! Great idea but needs some tweaking! I will try again and let you know what I come up with.
