Description

I was experimenting, and this turned out wonderfully! I served it with a white sauce, but I think would be excellent in the summer with vanilla ice cream.

Ingredients

  • FOR THE PUDDING:
  • 4 whole Eggs
  • 2 cups Milk
  • ½ cups White Sugar
  • ¼ cups Brown Sugar
  • 1 teaspoon Vanilla
  • ¼ teaspoons Salt
  • 8 slices Stale Bread, Torn Or Cut Into Cubes
  • 1 teaspoon Lemon Juice
  • 2 cups Sliced Strawberries
  • _____
  • FOR THE WHITE SAUCE:
  • 1 teaspoon Cornstarch
  • ½ cups Sugar
  • 1 cup Milk
  • 1 Tablespoon Butter
  • 1 teaspoon Vanilla

Preparation

Preheat your oven to 350 degrees F.

Whisk together eggs, milk, white sugar, brown sugar, vanilla, and salt. Once these are all whisked thoroughly, stir in the bread.

Now is a good time to slice your strawberries if you have not already done this. That way the bread will have a chance to soak up a little of the milk mixture.

Once the strawberries are all sliced, fold them and the lemon juice into the bread and milk mixture.

Pour the mixture into an 8×8 square baking dish, or if you’re like me, into a glass bowl because my square dish is in the freezer! Bake for about one hour, or until set.

While baking, make the sauce. In a small saucepan, combine sugar and cornstarch over medium heat. Stir in the milk and butter, and cook over medium heat until the mixture starts to thicken. Remove from heat and add the vanilla.

Drizzle the sauce over a piece of bread pudding, and enjoy! You will love it, guaranteed! I think this would be good served with vanilla ice cream in the summer, or made with blueberries or blackberries.
