Description

This loaf is so lemony and moist! The best I have ever had!

Ingredients

  • ½ cups Butter
  • 1 cup White Sugar
  • 2 whole Eggs
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ½ cups Milk
  • 1 whole Lemon, Grated Rind
  • 1 whole Lemon, Juiced
  • ¼ cups Sugar

Preparation

Preheat oven to 325 degrees F. Line a loaf pan with wax paper and spray with non stick spray.

Cream butter and 1 cup of sugar together. Add in eggs 1 at a time, combine well after each.

Combine flour, baking powder and salt. Add 1/2 of the flour mixture into the butter mixture, combine, then add 1/2 the milk. Add the rest of the flour mixture and rest of milk and the lemon rind. Mix just until combined. Don’t over mix.

Pour batter into prepared pan. Bake for 45-50 minutes, or until a toothpick comes out clean.

In the meantime combine the lemon juice and the 1/4 cup sugar. When the cake is done while it’s still in the pan, poke a bunch of holes in the cake with a wooden skewer. Pour the lemon, sugar mixture all over the cake. Let it sit for 15 minutes then remove from pan and let cool completely on a rack.
