Description

A delicious recipe that makes only two vanilla cupcakes! A quick and easy dessert.

Ingredients

  • 1 whole Egg White
  • 2 Tablespoons Sugar
  • 1 teaspoon Vanilla (yes, A Whole Teaspoon)
  • 2 Tablespoons Butter, Softened
  • ¼ cups Flour
  • ¼ teaspoons Baking Powder, Heaping
  • 1 pinch Salt
  • 1-½ Tablespoon Milk

Preparation

Preheat oven to 350ºF. Line a muffin pan with 2 liners.

In a bowl, add egg white and sugar and whisk until combined. Add in vanilla and melted butter and stir until mixed. Add flour, baking powder and salt and stir until smooth. Stir in milk. Divide batter equally between the 2 cupcake liners.

Bake at 350F for 10–12 minutes, or until cupcake is set. Let cool completely, then frost as desired. I used some leftover frosting that I had in my fridge!

I think you could probably add a little cocoa powder? Maybe a teaspoon?

I love to bake cupcakes, but since it’s just me and hubby a whole batch is just too much. This recipe is perfect for us. Plus they taste wonderful. And are a great way to use up any leftover frosting I have from making bigger batches of cupcakes. And since they are so quick and easy to put together, they make a great last minute dessert (just pop them in the fridge to cool quicker, I just top with a little powdered sugar sifted over them if you don’t have frosting handy).

It’s probably a good thing this recipe only makes two, because I would have given into my piggy side and eaten as many as I baked! Delicious cupcakes, and I loved that they were one bowl. I loved being able to make a batch of cupcakes in under 5 minutes. Thank you for the great recipe!!

These were yummy, and SO moist! The only issue that I had was that I doubled the recipe, and in trying to keep perfectly with your recipe, I measured two heaping 1/4 teaspoons of baking powder, and the baking powder flavor came through a little strong. But with rich enough frosting, I could hardly tell! I will definitely use this recipe all the time now, I didn’t even have to use my stand mixer, and it kept my husband and I from gorging ourselves! :)
