I loved these growing up, and was always thrilled when my mother made them for our breakfast.
1. Butter one side of the bread. Using a large biscuit cutter or glass, cut a round out of the center of the bread. Leave the round in the bread crust frame.
2. Put the bread, buttered side down, in a frying pan over medium heat. Butter the top side of the bread.
3. Fry until the underside of the bread starts to turn golden-brown, then flip. Move the bread circle elsewhere in the pan.
4. Melt a little butter in the well formed by the bread crust. Break an egg into the well, then sprinkle with salt and pepper to taste.
5. Cook 1-2 minutes, until the egg starts to set, then flip and cook another 1-2 minutes. The white should be cooked through and the yolk still a little runny (though you can cook it longer if you don’t like runny eggs).
6. Serve on a plate with the bread round, which is great for soaking up and eating the runny yolk with.

Yum! I’d forgotten about these–we’ve always called them ‘eggs in a hole,’ too. Love them!

We also make them – but call them one eye- egg sandwiches. I love to use different cutout shapes, some time the kids get hearts, a sun, a pumkin or a tree (depends on my whim and the season). A family weekend breakfast favorite!

I ate these growing up, but my grandmother called them “toad in the holes”. They are delicious and take me back to my youth. I now make them for my kids.
