Tastes just as fresh, healthy and lovely as it sounds! A slightly chewy cake, like a sponge cake, made with grapefruit juice and yogurt.
Preheat oven to 350ºF. Grease an 8×8 square baking dish and line with wax or parchment paper. On a cutting board, mash together grapefruit zest and sugar until combined, releasing its oils and becoming very fragrant.
In a medium bowl, whisk together the flour, baking powder and salt.
In a large bowl, beat the eggs and grapefruit sugar until combined. Add yogurt, grapefruit juice and honey. Stir well to combine. Add flour mixture in 2 batches, carefully stirring to combine.
Pour batter into prepared pan and bake for 25 to 30 minutes, or until the top is golden brown and a wooden skewer comes out clean with a few crumbs. Run a knife around the edge to release the cake and let it cool for at least 10 minutes before serving. Drizzle with honey for extra sweetness.

This was yummy but needed a grapefruit juice/powdered sugar icing my family thought that or some whipped cream.

I think that could totally work. The beautiful thing about this cake is that it’s not very sweet, it’s fresh and citrus-y. Try it with the wheat pastry flour and honey, although I’m not really sure how much honey to use, and let me know how it goes! If it’s not sweet enough, just drizzle honey on top of each individual serving.

This looks so good! But I gave up sugar and white flour. Do you think it would work with whole wheat pastry flour and honey?
