I only make this when the apple tree of my parents-in-law has too many apples but it is great on pancakes.
Cut the apples in quarters (don’t peel them). Add a few tablespoons of water and bring to the boil. Cook until the apples are very soft. Put them in a clean dishcloth and press out all the fluid in a large pan. Cook this juice on high heat until it becomes a syrup (a drop falling from a spoon makes a thread). Allow the syrup to cool down completely.
It tastes very good on pancakes and cheese.

I live on an orchard and we usually have an abundance of apples so I will be sure to give it a try!
