Hearty (and healthy) lunchtime recipe.
A proper Ploughman’s Lunch calls for 4 staple ingredients: pickled onions, meat, pickles and crusty bread. The beauty of this recipe is that it has no right answer. As long as you have some type of bread, cheese, meat, veggie and fruit served together, you have a recipe for Ploughman’s Lunch.
For a low-fat Ploughman’s Lunch, prepare the pickle, cubed cheese of your choice, salad greens in your choice of dressing, baguette of bread (warmed), and hard-boiled egg (optional). If you’d like an extra veggie side, try celery with peanut butter or carrots with ranch dressing. For the fruit, slice the banana and apple and place in a bowl with the berries of your choice. For the meat portion, choose something like a veggie burger patty. A slice of quiche is a nice alternative.
Lastly, choose a small dessert of your choice. A few pieces of chocolate or a low-fat granola bar is a nice choice.
For the drink, in a glass, pour the tonic water. Top the rest of the glass up with your choice of 100% juice and a splash of grenadine.
