An alternate and healthier version to Barefoot Contessa’s Old Fashioned Banana Cake!
Preheat oven to 350 degrees F, and grease two 9 x 2 inch round cake pans.
Use an extra large bowl, and combine the bananas, sugar, and brown sugar with your mixer on low speed, just until combined. Add the applesauce, eggs, vanilla, and orange juice to the mixture and mix until smooth.
In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients to the wet ingredients and mix just until combined.
Pour the batter into the greased pans and bake for 45 minutes, until a toothpick comes out clean. Cool in the pans for just a few minutes, and then turn the cakes onto a cooling rack to cool completely.
To make the icing, mix the cream cheese, butter, and vanilla with an electric mixer on low speed just until combined. Add the powdered sugar one cup at a time and mix on low until combined.
You have several choices on the appearance of your cake; this is what I did – I whacked off the rounded top on one of the cakes, and then iced the top. The second cake I cut exactly in half (cutting horizontally), and iced the tops of each half, so my cake was three layers.
If you only have three ugly nanners just half the recipe and do not make two cakes. It will be just fabulous as well! Or if you like walnuts, Barefoot Contessa uses them in her recipe. This, of course, is one of the many ingredients that I did not have in my kitchen.
